95 ingredients with a short season — three months or less — are at their best in August in France. Not only fruit and vegetables: the fish, the mushrooms, the game and the cheeses have a season too.
The heaviest fruit month of the year — thirty-four of them. Every plum at once: mirabelle, quetsche, reine-claude, Damson. Grapes, prickly pear, the vine peach, and the almonds arriving properly — Marcona, Largueta, Avola, with Bronte pistachio beside them. The first fresh hazelnuts, still milky. Beans turn half-dry: coco de Paimpol, borlotti, pochas. And heather honey, the darkest one there is.
