What it is

Not a hybrid of anything — it is a peach with a single recessive gene that switches off the fuzz. Peach trees occasionally throw nectarines and nectarine trees throw peaches; growers have found both on the same branch.

In the kitchen

The smooth skin means it bruises where a peach would not show it. Buy them loose and lay them in a single layer.
