What it is
The dusty bloom on the skin is not dirt but a wax the fruit makes itself, to hold water in and rain off. Rubbing it away is the fastest way to shorten a plum's life, and a heavy bloom is the mark of one barely handled.
In the kitchen
Under-ripe plums are the ones to cook. Their acidity and pectin set a compote that ripe fruit turns to soup.
