What it is
Bar-le-Duc still makes a jam from redcurrants seeded one berry at a time with a goose quill, a craft recorded since the fourteenth century. A skilled worker manages a few kilos a day, and the jar has always cost accordingly.
In the kitchen
They are loaded with pectin, so a jelly sets with nothing added. Strip them from the stalk with a fork, not your fingers.
