What it is
Its Latin name says “Persian”, but the peach is Chinese — the West simply met it halfway along the trade routes. In Chinese legend, the peaches of immortality ripen once every few thousand years, and the gods wait for them.
In the kitchen
A ripe peach smells ripe from a step away. Split it, grill it cut-side down, and serve it with almost anything creamy.
