Fraise Mara des Bois

What it is

Jacques Marionnet bred it in Sologne in 1991, crossing four older cultivars to put the scent of the wild strawberry into a plant that crops all season. Being everbearing, it is still fruiting in October when the spring varieties are long finished — and it is far too soft to travel, so it is sold close to where it grew.

In the kitchen

Never cook it and never store it below about 8 °C — cold shuts down the aroma that is the whole reason to buy it, and the aroma does not come back. Serve it whole, at room temperature, with cream and nothing else.
