What it is

Lorraine grows the overwhelming majority of the world's crop, and the season lasts about six weeks in August and September before it is simply over. Most of the harvest goes to tarts and to eau-de-vie; very little travels.

In the kitchen

Bake the tart on a base of ground almonds. They absorb the juice the fruit releases, which would otherwise soak the pastry.
