What it is
A black table grape from one variety, Muscat de Hambourg, grown in 56 communes of the Vaucluse between Mont Ventoux, the Monts de Vaucluse and the Luberon. Bunches must weigh at least 250 g, be loose and free of red berries, read above 18 on the refractometer with a sugar-to-acid ratio above 25, and be picked by hand into at least two trays so sorting happens in the vineyard. The mountain, over 1,900 m, cools the nights, which deepens the blue colour and holds the muscat aroma.
In the kitchen
Keep it cool, at 4–6 °C, and eat it within five to seven days, rinsing it only just before serving and holding the bunch by its stalk to keep the bloom. The berries have pips: halve and seed them for a tart or a salad.
