74 ingredients with a short season — three months or less — are at their best in July in France. Not only fruit and vegetables: the fish, the mushrooms, the game and the cheeses have a season too.
The tomatoes arrive with their names — San Marzano, cœur de bœuf, Green Zebra, Crimean black — and the month is largely theirs. Blueberries wild and not, blackcurrant, mulberry, the first plums and nectarines. Sweetcorn and edamame, okra and the trombetta courgette. Seven honeys in one month: lavender, thyme, sunflower, buckwheat, fir honeydew. It is the month to salt capers and to put up shibazuke.
