What it is
Dark, resinous and genuinely bitter — the honey people either love or send back. Its pollen count is so distinctive that laboratories use it as a reference sample, and Corsica protects its version with an appellation.
In the kitchen
It is a savoury honey. Put it with blue cheese, game or a duck glaze rather than on toast.
