What it is
The white tupelo blooms for two or three weeks in April along one Florida river system, and beekeepers barge their hives onto platforms in the swamp to reach it; a wet fortnight cancels the year. The hives are stripped of every other frame first, because a single day of a different nectar shows up in the jar.
In the kitchen
This is the honey for anything crystals would ruin — a mirror glaze, a bar syrup, a squeeze bottle that sits for months. It stays liquid on its own, so never warm it to loosen it: there is nothing to loosen, and the heat costs you the floral top note.
