What it is
From the false acacia, which flowers for barely two weeks in late spring — a single storm can wipe out an entire year's crop. Its very high fructose content is why it stays liquid for years while other honeys crystallise.
In the kitchen
It is the neutral honey — use it where you want sweetness without the honey announcing itself.
