What it is
Limes were planted along town avenues across central Europe long before anyone valued them for honey, and a mature tree in flower can out-yield a field of clover for the fortnight it lasts. The cool, menthol edge in the jar comes from the same aromatics you taste in a cup of lime-flower tisane.
In the kitchen
Use it where a warm honey would be wrong: whisked into a vinaigrette for cold white fish, or spooned over yogurt. It crystallises fine and fast — loosen the jar in a 40 °C water bath rather than on the stove, which flattens the menthol note.
