What it is
Almost black, and it smells of molasses, malt and the farmyard — it is the most divisive honey there is, and the one with by far the most antioxidants. Brittany makes it because Brittany grows buckwheat for its galettes.
In the kitchen
Do not try it on a scone. It belongs in a marinade, a barbecue glaze or a dark gingerbread.
