What it is
Hives are trucked up to the Provençal plateaux in July when the lavender opens, a migration beekeepers have made for generations. It crystallises into a fine white cream rather than gritty crystals, which is the mark of the real thing.
In the kitchen
Use it where its perfume is the point — over goat's cheese, in an ice cream, with apricots. Cooked hard it is wasted.
