What it is
Ling heather honey is thixotropic: it sets to a jelly in the comb and returns to that jelly faster than any other honey the moment you stop stirring it. That is why it cannot be spun out in an extractor at all — the comb is pressed, or sold whole, which is half the reason for the price.
In the kitchen
Beat it hard in the jar before you weigh it, or it reads as a solid and refuses to blend into anything. It holds air better than any runny honey, which makes it the one to use in a buttercream.
