What it is
Tom Wagner crossed four varieties in his garden at Everett, Washington, and listed the result in his Tater-Mater seed catalogue in 1983. Every seed list sells it as an heirloom: it is a deliberate modern cross, bred for skin that will not crack the way its green-when-ripe parent did.
In the kitchen
Judge ripeness by feel, not colour — it stays green, so look for slight give under the thumb and an amber flush at the blossom end. Salt it later than a red tomato: the acidity already pulls water and it goes slack within ten minutes.
