58 ingredients with a short season — three months or less — are at their best in June in France. Not only fruit and vegetables: the fish, the mushrooms, the game and the cheeses have a season too.
Stone fruit starts: the first apricots, and the sour griotte that exists for jam and clafoutis and nothing else. Redcurrant, gooseberry, green walnut for vin de noix — picked before the shell hardens, which is a matter of days. The flowers turn medicinal, lime and chamomile and meadowsweet and lavender, and the honeys follow them. In Japan it is eel weather: hamo and anago both, and bafun urchin at its richest.
