What it is
Its full name is Desmayo Largueta — desmayo, a swoon, for the way the branches droop. It is also among the earliest almonds to flower, so a February frost in the Ebro valley settles that year's price before anyone has seen a nut.
In the kitchen
This is the almond that stays crisp under sugar or chocolate. For garrapiñadas work at roughly one part sugar to two of almond, and keep stirring off the heat until the syrup sands and goes white before you return the pan to the flame.
