60 ingredients with a short season — three months or less — are at their best in November in France. Not only fruit and vegetables: the fish, the mushrooms, the game and the cheeses have a season too.
November sets December's table. The birds arrive together — goose, capon, poularde, turkey — and the goose foie gras and boudin blanc with them. Citrus returns: clementine, yuzu, Buddha's hand. Cardoon, kuwai, oca. Meanwhile the mushroom year ends in one go: matsutake, maitake, honey fungus and trumpet of the dead all take their last month, and so do the walnut and the olive.
