What it is
Harvested by flooding the bog and beating the fruit loose — each berry has four internal air chambers that float it to the surface. A ripe one bounces, and growers once graded them by dropping them down wooden steps.
In the kitchen
Stop cooking as soon as they pop. Past that the skins break down and the pectin that would have set the sauce is destroyed.
