Cédrat

What it is

The first citrus to reach the Mediterranean, carried west with Alexander's armies, and one of the three parents of all the rest. It is almost all pith and rind with barely any juice — grown for its perfume and its peel, never for drinking.

In the kitchen

The white pith is the edible part here, not a fault. Candy it, or slice it thin and dress it raw as a salad.
