What it is

Blazing orange berries on a thorned shrub that thrives where nothing should — dunes, steppes, roadsides. Soviet science put its oil in cosmonauts’ skin cream; the New Nordic movement put its juice on tasting menus, where it plays the citrus that northern latitudes never had.

In the kitchen

Pure, it is brutally sour — cut it with honey or fold it into cream. With roasted carrots it performs a duet nobody sees coming.
