What it is
Cultivated for at least six thousand years, and in 2005 Israeli researchers germinated a two-thousand-year-old seed recovered from Masada. The tree that grew from it was named Methuselah and has since fathered a crop.
In the kitchen
Medjool for eating, Deglet Nour for cooking — the first is soft and caramel, the second firmer and less sweet.
