What it is
For centuries, mountain villages from Corsica to the Cévennes lived off the “bread tree”: chestnuts ground into flour when wheat wouldn’t grow. The candied marron glacé turned the peasant staple into a jewel — same nut, different destiny.
In the kitchen
Score a cross before roasting or they explode — every fireside learns this once. Their sweetness loves mushrooms, pork and dark chocolate.
