What it is

The first cultivated carrots, in Persia, were purple and white. Legend says Dutch growers of the 17th century bred the orange carrot in tribute to the House of Orange — a vegetable that carries a flag.

In the kitchen

Roasting concentrates its sugar; a spoonful of honey and a pinch of cumin make it sing.
