What it is

Every apple on Earth descends from wild forests near Almaty — a city whose name means “father of apples”. Traders carried seeds down the Silk Road, and humanity has since named more than seven thousand varieties.

In the kitchen

Firm, tart apples hold their shape in the pan; sweet ones collapse into sauce. A knob of butter and cinnamon suits them all.
