What it is
A narrow strip of Calabrian coast grows nearly all the world’s bergamot, a citrus too bitter to eat that conquered the planet by scent alone: it is the soul of eau de Cologne and the perfume in every cup of Earl Grey. Cooks are only now reclaiming it from the perfumers.
In the kitchen
Treat the zest like a spice and the juice like a vinegar. A drop transforms a crème brûlée, a vinaigrette or a dark chocolate ganache into something people can’t name.
