What it is
The Muscat of Alexandria grapes of the Axarquía are still dried on paseros, sloped stone beds angled at the midday sun, and are cut and sold in whole bunches with the stalk left on. In 2018 the FAO added those terraces to its register of Globally Important Agricultural Heritage Systems.
In the kitchen
They keep their seeds: serve the bunch whole beside a manchego or a Pedro Ximénez and let people spit them, or halve and pip each grape if it is going into a dish. Never put them through a food processor — the crushed seed is bitter.
