What it is
The pruneau d'Agen comes from the ente plum, grafted from a variety crusaders brought back from Syria. It is dried in ovens rather than the sun, and Lot-et-Garonne still lives on it.
In the kitchen
It belongs with pork and rabbit as much as with dessert. Southwest France has always treated it as a savoury ingredient.
