What it is

So costly in Georgian England that a single fruit could be rented for an evening to sit at the centre of a dinner table, returned uneaten the next morning. It was architecture as much as food — stone pineapples still crown gateposts across Britain.

In the kitchen

It contains bromelain, which digests protein — it will stop gelatine setting and will curdle dairy if left too long.
