What it is
The plain of Marathon takes its name from the Greek word for fennel, which grew wild there — the famous run was named after a field of it. Prometheus, myth says, smuggled fire to humans inside a fennel stalk.
In the kitchen
Raw and shaved, it crunches with licorice freshness; braised, it melts and turns gentle. Keep the fronds as a free herb.
