What it is
Old Norse dilla means “to soothe” — the herb once calmed babies’ colic. The North never let it go: gravlax, that Scandinavian invention of salmon “buried” in salt and dill, remains its masterpiece.
In the kitchen
Dill hates heat and long waits: snip it over the dish at the table, especially anything with yogurt, eggs or fish.
