What it is
Chinese growers take two vegetables from the same plant: green jiucai in full light, and jiuhuang blanched under cover until the blades come up pale yellow and sweet. The flowering stems make a third, sold with the bud still shut.
In the kitchen
Add them in the last thirty seconds of a stir-fry, cut in 4 cm lengths, and do not chop them fine — the flavour comes out of the cut ends, and a fine chop leaves it in the pan.
