What it is
Greeks crowned athletes with celery leaves and planted it on graves; Victorians served it in crystal vases as a table luxury. Today it works anonymously in every stock — the third of the French mirepoix trinity.
In the kitchen
Its leaves are a seasoning in themselves — chop them like an herb over soups and salads.
