What it is
The Greeks called the plant marathon and named a battlefield after the fennel growing on it — the run that gave us the marathon began in a fennel field. Indian restaurants still set out sugared seeds by the door as a digestive.
In the kitchen
Crack the seeds lightly before they go into a sausage or a pork rub. Whole they stay inert; powdered they turn medicinal.
