What it is
It is the smell of commercial curry powder and of maple syrup imitation both — the compound responsible, sotolon, is the same. People who eat a lot of it genuinely smell of maple, which has caused more than one unnecessary medical consultation.
In the kitchen
Toast it barely, and stop before it darkens. A second too long and the bitterness becomes the only thing you taste.
