What it is
Er jing tiao means roughly two gold strips, for the long grooved pods grown in the Sichuan basin around Pixian. It is the only chilli the traditional Pixian doubanjiang makers will take, chosen for fragrance and red pigment rather than pure burn at 15,000 to 20,000 Scoville.
In the kitchen
For chilli oil, grind them coarse and pour rapeseed oil at 130°C over them in three additions — a single hit of 200°C oil scorches the flakes and destroys the fragrance you paid for. Let it stand overnight before straining.
