What it is
Limes boiled in brine and dried in the sun until they are hollow, light and almost black — loomi in the Gulf, limoo omani in Iran. The fermentation that happens as they dry turns the fresh acidity into something dusty and slightly bitter.
In the kitchen
Pierce it twice and drop it in whole, then remove it before serving. Ground, it clouds the dish and turns aggressively bitter.
