What it is
Deulkkae are perilla seeds, from the same plant whose leaves wrap Korean grilled meat, and they run to around forty percent oil — which is why the ground seed thickens a stew rather than merely flavouring it. That same oil is why it goes rancid faster than anything else on the spice shelf.
In the kitchen
Keep it in the freezer and buy small quantities. Stir it in at the end and off the boil — held at a boil the oil separates and the broth turns grainy — about two tablespoons to a litre for body.
