What it is
The seed and the leaf come from one plant and taste nothing alike — the leaf is soapy and green, the seed warm and orange-peel sweet. Seeds were found in Tutankhamun's tomb, and the plant does not grow wild in Egypt, so someone imported them for him.
In the kitchen
Toast and crush it coarsely rather than grinding to powder. The husk is papery and the fragments give little bursts of citrus.
