What it is
Herodotus reported that giant birds built nests of cinnamon sticks on cliffs, and harvesters tricked them into dropping it — a tall tale spice merchants encouraged to guard their sources. The truth was quieter: the rolled inner bark of a Sri Lankan tree.
In the kitchen
True Ceylon cinnamon is soft and layered like a cigar; cassia is harder and louder. Bloom either in warm butter or oil to open the perfume.
