What it is
Neither root nor cabbage: it is a stem that swelled above ground into a pale sputnik with leaves sticking out at angles. The German name says it plainly — Kohl and Rübe, cabbage and turnip — and Charlemagne ordered it planted across his empire.
In the kitchen
Eat it raw. Peeled and cut into thin batons it is crisper and sweeter than any cooked version, closer to an apple than a cabbage.
