What it is
Goats were milked before cows, making this perhaps the oldest cheese lineage on Earth. Loire legend credits the Saracens, halted at Poitiers in 732: they left behind their goats and their cheese recipes, and the valley has been grateful ever since.
In the kitchen
Young and fresh, it loves herbs and olive oil; aged and firm, honey and walnuts. Ten minutes under the grill on bread, and any salad becomes lunch.
