What it is
The milk is set with acid rather than rennet and slipped, entirely unsalted, into the little twelve-centimetre cornets it is sold in. The Rove goats kid in mid-winter, so there is no brousse at all from November until the herd is back in milk.
In the kitchen
No salt means no keeping — eat it within two or three days. It goes as a dessert, with orange-flower water and sugar, as readily as it goes under olive oil and pepper.
