What it is
In 1972 it became the first goat cheese in France to be granted an appellation, over one of the smallest protected zones in the country, a corner of the Brenne marshes. Locals call it the Eiffel Tower; the pyramid is said to copy the pointed bell tower of Pouligny's church.
In the kitchen
Cut it from the tip downward, in thin vertical wedges. The point is drier and far stronger than the base, and a horizontal slice hands you one texture at a time instead of both.
