What it is
A lease of 1451 between the Bishop of Évreux and his tenants in Quercy fixed the tithe in these cheeses, which means it served as currency before it was ever a delicacy. It weighs about 35 grams — the whole cheese is a single mouthful.
In the kitchen
Warm it, do not cook it: two or three minutes at 180 °C on toast, until it slumps but takes no colour. Past that the fat separates and the paste goes grainy.
