What it is
In Corsica and the Cévennes the chestnut was called the bread tree, and whole mountain populations lived on its flour when no grain would grow at altitude. A failed chestnut harvest meant famine in a way a failed wheat harvest did not.
In the kitchen
It is naturally sweet, so cut the sugar in any recipe using it. And sift it twice — it clumps more than any other flour.
