What it is

It had gone out of commercial fields by the 1920s and came back out of a USDA seed bank in the 1980s: fourteen pounds of seed sent to a Savannah eye surgeon, twelve acres planted in 1986, and a crop rebuilt from there. Its history is West African as much as Carolinian — the tidal-field system it grew under arrived with enslaved rice growers who already knew it.

In the kitchen

For separate grains, rinse it and cook pilaf-style at about 1.5 parts liquid. For the porridge, do the exact opposite: no rinse, four parts stock, and stir — the surface starch you would normally wash away is the whole mechanism.
