What it is
Japchae was composed for a banquet of King Gwanghaegun in the early seventeenth century and contained no noodles at all — only stir-fried vegetables and mushrooms. The dangmyeon arrived three hundred years later, once a sweet potato starch noodle factory opened at Sariwon in 1919 and made them cheap.
In the kitchen
Boil six to seven minutes, drain, and dress them in sesame oil and soy while still hot — cold dangmyeon stops absorbing and sets into a rope. Cut the drained noodles with scissors before they go back in the pan, or the dish becomes impossible to serve.
